South of the Border Omelet

Warm up with this delicious, high-protein omelet! With over 25g of protein and a healthy balance of carbs, fats, and protein, you’ll be starting the day off strong.

Need to modify the macros? You can use less cheese to reduce the fat or add more egg whites for more protein.

Ingredients:

  • 1 egg + 3-4 ounces of egg whites

  • 1/2-1 ounce of Mexican cheese

  • 2 ounces of mini bell peppers, chopped

  • 1 ounce of black beans

  • 1 dash of cumin, salt, pepper, and garlic

Directions:

+ Whisk your egg, egg whites, and spices. Set Aside.

+ Chop bell peppers into bite-sized pieces, then rinse your black beans,

+ Heat a pan over medium-low heat, then spray with cooking spray.

+ Add your peppers with a bit of salt. Cook for 1-2 minutes before adding your black beans.

+Pour egg mixture over top and cover until they’re cooked through. Add your cheese and serve with salsa, avocado toast, or rice!
