Pumpkin Spice Protein Pancake Bowl

Pumpkin spice season is in full swing, baby! This recipe is perfect for days when you need a really quick breakfast—or a sweet treat— that’s high in protein, healthy, and delicious. The pumpkin spice protein pancake bowl is a great option pre or post-workout, as well as pre or post-surf.

Ingredients:

  • 8g Kerry Gold Butter (melted)

  • 50ml unsweetened oat milk

  • 46ml egg whites

  • 50g Trader Joe’s Pumpkin Pancake and Waffle mix (or regular pancake mix with 1 tsp of pumpkin pie seasoning)

  • 1 scoop of vanilla protein powder

  • Optional: 85g apple, 1 tsp maple syrup, cinnamon

Directions:

  • Melt butter in a small bowl

  • Whisk in oat milk and egg whites

  • Add in your pancake mix and protein powder, then mix until well combined

  • Microwave for 1:30-2 minutes, depending on the strength of your microwave

  • Top with apple cinnamon mixture
