Thai-Inspired Turkey Meatballs
I’ve been on a Thai kick recently. There's something so refreshing about the flavors when it’s hot outside. These Thai-inspired turkey meatballs are a super-easy and refreshing recipe to add to your weekly meal prep. They’re great for a quick hit of protein, in a cold noodle dish, lettuce cups, or paired with rice and fresh vegetables.
Thai-Inspired Turkey Meatballs:
Ingredients:
1 pound 99% lean ground turkey
6 fresh mint leaves, finely chopped
1 tbs garlic powder
1 tbs dried basil
1/2 tbs cumin
1 tsp ginger
1/2 tbs paprika
1 tsp salt
1 tsp white pepper
1 egg, beaten
*For serving: lime wedges and cilantro
Directions:
Preheat oven to 400 F.
Combine turkey, spices, and your beaten egg into a bowl. Mix well before covering and placing in the refrigerator for 30 minutes.
After 25 minutes, heat a cast-iron skillet over medium heat. Remove the turkey mix and form 1-2 ounce meatballs. Place in the skillet and sear on all sides.
Turn off the heat and place the skillet in the oven to finish cooking the turkey. Cook for about 10-15 minutes or until the turkey reaches 165 degrees
I enjoyed mine in lettuce cups with a peanut sauce slaw (bonus recipe listed below) and a side of rice.
Peanut Sauce Slaw:
8g peanut butter
1/2 tbs soy sauce
1 tsp rice vinegar
Pinch of red pepper flakes
1 handful of mixed cabbage (purple, green, and carrots)
Whisk together peanut butter, soy sauce, vinegar, and red pepper flakes until combined. Massage the cabbage mix into the sauce and refrigerate for about 20-30 minutes.
