Recipe: Healthy Pizza Frittata

I’ve been craving Italian food so much recently, so I made this pizza frittata recipe to enjoy those flavors after a long surf session. This recipe is perfect for weekend meal prep or for brunch with your friends.

Serves 2-4

Ingredients:

10g Kerrygold butter 

150g broccoli

100g mushrooms 

80g pizza sauce

1 healthy handful of spinach 

10g olives 

2 eggs + 4 oz egg whites 

1 tsp garlic powder

2 tsp dried basil

1 tsp dried oregano 

Dash of salt 

34g part-skim mozzarella cheese

Directions:

Preheat oven to 350

Heat a cast-iron skillet over medium heat.

Chop your veggies and set them aside.

Place your butter in the pan until it’s melted, then add the broccoli. Cook for about 1-2 minutes before adding in the mushrooms. Cook for another minute, then add the pizza sauce and stir to combine.

Add your spinach and cook until just wilted.

Beat your eggs and egg whites with your spices before adding them to the skillet.

Cook for about 2-3 minutes until the eggs are set on the bottom, but the top is still a bit jiggly. 

Add your cheese and olives, then place the skillet in the oven for 3-5 minutes. Keep an eye on it so it doesn’t burn!

Serve with sourdough toast for a full pizza feel.

Optional changes: 

Add pepperoni or turkey pepperoni, ground meat, or swap cheeses!
