Dawn Patrol Breakfast Burrito
Hello!! The blog has been quiet because the business has been rebranding (more on that in the coming days), but we are back with an amazingly delicious and nutritious breakfast burrito! This recipe is perfect for after your morning surf session, and it freezes well so you can defrost and go about your day.
Makes 1 serving:
Burrito shell of choice
2 eggs + 2-3 egg whites
2-3 ounces of black beans
1 ounce of lite Mexican cheese
2-3 ounces of Trader Joe’s frozen Mexican-flavored riced cauliflower (or diced mini bell peppers)
Salt, pepper, and garlic
Salsa
Directions: Whisk eggs and egg whites together with salt, pepper, and garlic.
Heat a smaller skillet over medium heat and cook your eggs, constantly stirring. Add your black beans, veggies, and cheese and cook until done.
In a larger skillet, heat your tortilla on both sides for 15-20 seconds.
Set aside, then put your egg mixture and salsa into the tortilla and carefully roll.
Place it back in the skillet to seal and get a little texture on it.
Eat and enjoy! Feel free to add guacamole or anything else your heart desires.
